Substitute for lime
Elisha_89591
Hey all! I'm allergic to lime. I can't have any parts of it not even as a garnish. Is there anything I can use as a substitute? Maybe something with a similar flavor?

It's hard to say without knowing exactly what component of lime is allergenic for you, but Dave Arnold's book "Liquid Intelligence" has a recipe for "lime acid," which has a similar flavor profile to lime juice (though without the sweetness). The recipe is:
94 grams filtered water
4 grams citric acid
2 grams malic acid
.04 gram succinic acid.
He notes that the succinic acid (which I have never seen called for in any other recipe) can be omitted, but that it helps a bit with creating an "authentic" sort of flavor. If I was in your shoes, I wouldn't bother with succinic acid at first... just start by trying the combination of citric and malic acid (assuming you're not allergic to them), sweetening it a bit to taste, and seeing how that works for you.

I would simply try to add 2% of malic acid to lemon juice if you're not allergic to them. It would taste more citrusy since it's probqably not just the acidic effect that you're interested in.

Thanks for the advice! I'm definitely getting that book!
Anymore you'd recommend? I already have the Professional Chef and Garde Manger.

I'll certainly give it a shot. Thanks!
