Gelato donuts

kids were asking for donuts the other day (doesn't help that we have to drive by it every single day) and I was wondering how I could bring the flavor in without all the donut (I'm weird that way). So, I decided to make a gelato donut (since the weather's getting warm). So, I did buy some donuts (chocolate glazed and double chocolate), chopped them up and threw 1/3 in with cocoa butter, and the other2/3 in with water in separate bags and into the bath for ~3 hrs. Strained them so I had chocolate donut cocoa butter and chocolate donut water. Then I proceeded to make the gelato base per usual and set aside part (~200g as a test) , blended it after chilling it and strained it into the siphon. Set up the station of LN2, cocoa butter, melted chocolate and a hanging station.It works "ok" (the setup) but the flavor and the texture (donut air gelato) was very much what I wanted. If I were to do again, it would be better if I had a donut mold I could siphon into a mold and immerse the mold into LN2. The chocolate was starting to harden a bit (had baby backs in the bath so couldn't use it as the station) and put warm water in the holding container which did help a little, but a steady temp of a water bath is better. Over all am pleased with the first effort.
