Day of compromises. Gas stove crapped out so did a slow roasted bird on the weber with the lid propped open (a few hot spots, but turned out well). Tomatoes were crappy so ended up using tomato paste in guacamole (amazing twist when I added roasted pistachio oil). But I finished the gelato donuts to look like a regular double chocolate donut with sprinkles. B/c they were done with the siphon and LN2, they were aerated and thus almost empty inside with just a drizzle of liquid gelato inside. So not filling yet very enjoyable (at least that's what I heard, I only had a small bite) This would be a great idea, but now realize the donut mold would have to be single bite size.
@Chef Nick any ideas on small donut molds that can be immersed in LN2?
