I'm of the opinion that any food item that requires a high level of dexterity - Dumplings, hand pulled noodles, masa tortillas - im going out to eat.

Skip the parts about pleating and just use ramekins. - key here is the ratio - use way less filling per layer that you think, to get the ratio correct, otherwise you're left with a soup dumpling meatloaf.
