Liquid Gel

So I took Ponzu I made and turned it into a gel with Agar. I took 230g of ponzu and added 4.6g of agar and simmered for 3 min. Then added another 230g of ponzu, bended, let set, blended, passed, and sucked out the air. It has a bit of a bitter taste. Thoughts?

I tried it again after the gel cooled down further and the bitterness is gone. Weird.

It is most likely the bonito in the ponzu or the agar.
