My name is Curtis Peery. I own a Mexican Restaurant named Calaveras Cantina in Jupiter Florida. Does anyone have a great Corn Tortilla recipe and holding technique.

Welcome! When you write "corn tortilla recipe" do you mean beginning with dried corn and nixtamalization?

This can be done using masa or fresh made corn flour using nixtamalization as

describes. After stumbling using pure trial and error, I believe it was Frank that tuned me into the nordic food lab which outlines the process

Dave arnold (see cooking issues) has also doe some work and has some good advise. Depending on the philosophy of the restaurant, this may dictate with path/technique you choose.
