Due to the heat advisory, I fired the tandoor up inside to play with some Uzbek non recipes.

While putting the non here...

expect to lose a few of these...

I need to practice the removal as this non nose dived into the grate at the bottom.

There is hot, and then there is tandoor hot. The walls registered 260°C/500°F+ with the IR thermometer.

I've had the tandoor for over a year. I just purchased the gas burner for it so I can use it inside.

Tandoor, refrigerated chef base with 24" charbroiler and space for a NG countertop deep fryer.

Alto Shaam CTX4-10E oven, with another to go under it on the way, 36" GE induction cooktop, sink and space for 3 circulators, with storage and 30" fridge draws underneath.

Above all of it two 8'x4' hoods each pulling 2,500+ cfm on high and two make up air units blowing in ~2,000 cfm on full.
