Grilled octopus
Minh_Huynh_48807
Trying out a new way beside sous-vide.
Grilled octopus + modified chimichurri sauce + grilled lemon.
Poaching the octo.
Quick sear on the grill after flash marination.

Have you tried pressure cooking it?
Minh_Huynh_48807
No as I don't have one. Maybe one day..
Results were pretty amazing. Very tender. I tried several time SV but never yield the right consistency I was looking for.

Glad it worked out well! Looks delicious. How long did you poach it for?
Minh_Huynh_48807
About 40 min or so. I poked it with the fork to know when it was ready.

One of my favs. What did you poach it in?
Minh_Huynh_48807
Red wine, carrots, garlic, onion, thyme.
In a sauce pan, 'sauté' some garlic, onions, carrots, thyme. Deglazed the pot with red wine. Cook a little to let the alcohol evaporate. Add octopus to pot and add some water to cover the whole octopus. Bring to a boil and turn heat to low and simmer for about 40 min.
