Cheese steak

I had no intention of posting this pic as it was just a little experiment for lunch. I bagged up a steak after a quick sear and decided to try something different- I replaced the butter with blue cheese and added little bit of instant coffee. Ninety min in the sous vide and- Wow. The resulting sauce was incredibly tasty. This would probably make for some really good sandwiches next time around.

Nice! BTW, you can infuse the butter with the blue cheese a couple of different ways. Cold (strips in between slices of butter for 2-3 days), warm, gently chop and heat the cheese in a BM and add butter (like a beurre blanc) until emulsified, steep for 20ish minutes strain and store (also goes well in Chocolate cake-blame Heston :-)..)

here was my first a couple years ago. I gave it to someone who HATES blue cheese.....and then they had this....is was in the liquid chocolate and cake. :-)
