Amylase making bread gooey

I've attempted to make the brioche buns but the amylase seems to make inside gooey. I'm from the UK and the only amylase I can seem to find is for beer and contains dextrose and amylase.
I'm unsure what's going wrong, hopefully someone could help!

Yes, it very much sounds like you are getting too much amylase into your recipe, and so too much starch is being turned into gooey sugar. Suggest you try the recipe without adding any amylase. Also, if you're using an instant yeast, check the label since many instant yeast packets include some amylase already.
