I think it's glycerol monostearate. there's no good substitute for this chemical. it's marked as optional in the recipes i've seen. it will improve the overall product, but if you leave it out, you will still get a good end product.

I am going to assume from these ingredients you want to make the red velvet cake?
As brian stated there really isn't a substitute for the glycerol monostearate (GMS), I don't know where you are but it is sometimes found in Indian markets. It is an optional ingredient, so if you can't find it leave it out and it will still taste good. If you really are concerned about it, you could add a small amount of liquid soy letcithin as a possible substitute, the GMS in this recipe is as an emulsifier, the liquid soy letcithin is a good emulsifier so it should work fine. In other recipes GMS is also used to add body to the emulsion, which is why you can probably find it in an Indian market as it is an ingredient in Indian ice cream.
As for tartaric acid, I highly recommend

using cream of tartar, as the cream of tartar may not give you the results you want. Cream of Tartar has an extra potassium molecule so it cannot always be substituted for tartaric acid, tartaric acid is water soluble and cream of tartar is not. A better substitute would be a teaspoon of white vinegar. The tartaric acid reacts with the baking soda which is part of the leaven in your cake, the vinegar will do the same thing. Many red velvet cake recipes call for the use of vinegar, I have made red velvet cakes using vinegar and it works just fine and does not effect the taste. Alternatively, you could use citric acid, however I do not know how much or if it may effect the flavor, or if at all.

I'm sorry but I can't use these two things coz of having alcohol ( or fermented from crushed grapes) and also mark as E codes.
If possible please tell me, how much I add vinager 1tsp is enough to substitute tartaric acid?

Yes for this recipe use 1 teaspoon.

I'm not sure what ingredients have the alcohol you're referring to, however, if you're concerned with either GMS or the lecithin containing alcohol, I did locate a certified
Halal GMS
, and a certified
Halal Soy Lecithin
. I'm not sure what the issue is with an "E code" because almost everything, even vinegar and sugar, have them. I hope that helps.

Thank you but most of Islamic sites saying it's questionable and some sites it's haram also some sites are selling (specially Chinese one ) halal GMS, I'll check that, and recipes which are having alcohol in it and also in making of sugar syrup for cakes any substitute for alcohol or I just omit.

I don't understand why is GMS contains alcohol ?
Pure acetic acid is %100 acetic acid yes it came from alcohol but it is no longer alcohol and no longer haram .

GMS isn't acetic acid. GMS: glycerol monostearate, is an emulsifier. As for why it contains alcohol, i cannot answer that, but most of the GMS that are for sale indicate that they do contain alcohol.
