I tried making a fluid gel an hour ago. Since I don't have a scale for measuring a precise amount of gellan to liquid, I just added some gellan to the liquid.
The mixture set, and blended (liquified) properly and worked out nicely. But after I put the squeezer into the fridge for 20 minutes, the liquid gel set again.
Is this a result of adding too much gellan to the liquid, or is it caused by something else? Does anyone have any advice for measuring the gellan without a milligram scale?
