Magnolia Leaf Cooking
bkeene12
I saw a fellow re-creating a delightful dish he had in Japan. They cooked on a magnolia leaf. I have a few magnolia trees around the house so figured I would give it a shot.

Does the leaf serve any purpose other than decoration or does it impart some flavor to the fish? I have some magnolia trees in the back and was curious about attempting something like this.
What else did you put on this?

I will be honest- it did impart a flavor but it is not a flavor I would seek out. It had a taste similar to uncooked vodka. That said, I am glad I tried it. First, I took the "fur" off my leaf by scraping with a spoon. Then, I made a paste using some miso, sautéed shiitake mushroom, sake, mirin, sugar and shallots. Then I grated some ginger over the mixture, added some green onion and put my cod slices on top. I put it in a 425 oven and let it go about 12 min or so. Then I brushed it with some teriyaki and let it finish up. When I pulled it from the oven, I brushed it with a little bit of butter and gave it a taste. Perhaps, my "off flavor" was due to the fact this particular magnolia leaf came from an old tree that lived next to a busy road for the last 50 years?
