I'm new to confenctioner cooking. I have been trying to refine my candy making skills for a few months now. After trying a bunch of faulty gummy recipes i finally found the haribo gummy recipe on chef steps. I used the gummy recipe and had great success! However, I would like to know how to give the gummies a wax coating for a shiny finish and to help keep them from melting together.t
What type of wax works best and how is it best applied?
Are gummies coated in corn starch before wax finishing?
Will coating them with wax make them last longer?
Another question, is about sour coating gummies. Is fumaric the best acid to use to prevent weeping. Can I use malic acid or fumaric/malic blend?
