kudzu powder

I was reading a piece on David Bouley the other day and he was talking a good deal about kudzu powder, using it as a gelling agent and dusting fish for poaching with it. Anybody work with this ingredient or can point me to more info?

Also known as kuzu have used it in a number of ways, for thickening and flavoring sauces, faux brioche, gnocchi pillows etc. Much inspired by mugaritz. Recipes in that book are relatively easy and lend themselves to many flavors.

We just watched the No Reservations where Bourdain goes to Spain, and they serve those kuzu gnocchi at Mugaritz.
