
Made these bao on the weekend with Chefsteps recipe. I steeped the milk win corn cobs and toasted corn husk, the flavour of the milk was strong, but didn't really transfer over the the bao itself. Any ideas how to get a more pronounced corn flavour? Perhaps add a percentage of corn flour also?
Stuffed with Cochinita pibil, tomatillo salsa, crema, pickled red onions.
