Dry Ice and Ice Cream Question

One of the things I like about some of the LN videos I see is how you can disperse directly from a siphon into the LN and get cool shapes. My question is, how cold does the setting bath need to be for the shapes to hold like that? Would this be possible to accomplish with dry ice and high proof alcohol or would it still not be cold enough? Alternatively, is there a way to make those different shapes by other means?

I can't say that I have ever tried, or heard of anyone trying, to cryopoach in a nearly pure ethanol bath chilled with dry ice. I could imagine that it might work, but getting ethanol that pure can be as difficult (or more in some places) than getting liquid nitrogen.
