I pretty badly want to make
this awesome cheddar sauce. However, Sodium Citrate is hard to get your hands on in Denmark. Sodium Hexametaphosphate is pretty easy, but the form you get it in is called "descaler for washing machines", which I highly doubt is food grade stuff. The latter is pretty much impossible to get your hands on if you want it food grade.
If I buy Sodium Citrate (which I guess is the same as trisodiumcitrate?), I'll have to buy 55 pounds, which yields a lifetime worth of cheddar sauce (fine with me!). The recipe says that the SHMP is a vital component, though. So even if I manage to get my hands om some sodium citrate, is it possible to get the same results, potentially substituting SHMP with something else?
Is it possible to extract the ingredients from some household ingredients, or even better; can I substitute them with something else?
