Fizzy Fruit: cantaloup,watermelon, grapes with a coconut rum infused whip cream

Crab cake Benedict, hash browns on bottom, crab cake, 70C SV egg, whipping siphon Hollandaise...

Due to alcohol content (6 bottles of bubbles) the final dish was unable to be photographed:

Cocolate chip/butterscotch banana bread with pureed banana/bourbon sauce

CS 7 hours SV at 185F save that juice and it reduces to even more decadence. Out of 6 of us 3 people said they didn't like pork belly....the rule in the house is you have to taste it....you are allowed to actually spit it out , no questions asked, if you don't like ...period. EVERYONE ate every piece of it..... and yes, big sear before serving
