Chuck roast cooked 24 hrs with Onion/almond fluid gel (ya I got on the SV onion train), Garlic zucchini puree topped with slices of smoked beets, pickled beets and roasted beet salad (beets are ready.....). Chuck was done via modified new Joule Short rib recipe using a home made smoking BBQ glaze AND another with the CS smoked scallion crust (So a battle of the chuck roasts) with demi glaze and quinoa. For desert, bite size passion fruit gateau, banana hazelnut gel with chocolate, caramel and popping candy dust.
