Jellied Beans, Can I use Honey?
Tim_Sutherland_52834
I'm planning to make the jellied bean recipe for a guy who is a honey nut. If I replace the glucose syrup with honey can it be a 1:1 switch or does it need to be different to avoid crystallization issues?
Or will the substitution cause large, undead bees to arise that feed on bbbbrrrraaaaiiiinnnnssss and make the world an unsafe place?

Honey is quite a bit sweeter than glucose syrup, since it's high in fructose. I would suggest you use about 40% relative to the weight of glucose syrup.

I'm going to say brains is the answer.
