In last video where you guys make your apartment ribs, you use charred scallions. How did make them? In the oven at 150C for 8 hours? Why you don't update original recipe?

They did a similar version with meathead (can't post link bc I'm on my phone) where the rub included scallion ash

Yes, I did see that. My confusion is coming from scallion ash is, as far as I can tell, not used in the apartment rib recipe, and I'm wondering why he thinks the recipe needs to be updated. I may be wrong, happens all the time, but I have not found where "In last video where you guys make your apartment ribs, you use charred scallions...Why you don't update original recipe?" is coming from.

For the charred scallions (see scallion ash -

) , roast in oven (as low as it will go-mine 170F) in a single layer for ~10 hours, then crank the heat to 350 (I use 400) F for ~10 minutes until dark and crisp. I played with the amount of smoked salt in the base and found 1:1 was a bit salty for me but about .4:1 (salt:scallion) worked well.

And in the apartment ribs, they use onions and garlic. I think you're referring to the
scallion ash,
but I haven't found where they use it in the
apartment ribs
, or the
apartment ribs rub
.
