Too many Cloudberries!

Hello fellow Chefstepsoids!

I've gitten my hands on more cloudberries than i know what to do with and would like some awesome ideas for things to do with them other than the traditional jam I usually make.

I'd love to incorporate it in a main course or a starter but desserts are much appreciated as well! I myself made a, not too shabby, Frozen Daiquiri with them as a first project

So please share your ideas here and lets make wonders!

How about freezing some for later? Ice cream? Syrup? Or even juice if you have enough.

Ferment or pickle some, make a vinegar and roast or SV beets in it. Combine in a reduction (of birch or maple syrup) and serve glazed over yams with a main (like pork or foul). Deserts, panna cotta, sorbet's, custards etc etc. Pretty much the skies the limit there.
