In the unreal quail egg recipe I have read that I need to heat the alginate mixture to 60 degree. Is this only to let the alginate dissolve in the water faster or do I also need to place the frozen "yolks" in the warm water?

I'd heat the alginate bath up well beyond 60c to get it to hydrate fully. Then cool back down to 60c, or chill and heat up to 60c when you are ready to use. 60c helps thaw the spheres when you drop them in frozen. This keeps portions, and shape consistent.

Thanks Brian! Saw u did the quail eggs to haha. Looked fantastic and I have some questions if you like to answer them?
1. For how long can I store the yolks in the holding bath? Just a few minutes? And will it be possible to make the eggs 1 day in advance?
2. Will crushing the lemongrass pulp trough a potato ricer and let it drop in a strainer or cheese cloth be a good alternative for the centrifuge?
3. Is the lemongrass mixture still warm/hot when you pour them in to the shells and place the yolks inside?

1. Can hold them for a bit, but would need to be stored in a passion fruit juice base. They "might" hold for a day, but why would you? Easier to do a couple hours ahead and store in PF base.
2. A strainer (e.g. chemex filter) should be fine.
3. LG mixture will still be hot when you pour into mixture.

I would make the spheres day of. The eggs can hold finished for several hours. You can make and freeze the passion fruit hemispheres well in advance, and prep the alginate bath ahead too. Once that's done, banging out the yolks takes very little time. I just blend the heck out of the lemongrass in a blender, then strain. Your yield will be less than a centrifuge, but it will be enough. Add the lemongrass gel warm, it will set slightly as it cools to give the right effect. I usually make them 2-3 hours ahead.
