Using a pot rather than a tank?

I recently received a polyscience immersion circulator as a gift. I live in a small NYC apartment and I don't really have room for the polycarbonate tank unless it's 100% necessary.

is a pot an acceptable substitute? is there a downside to this? my biggest pots are: a 16-quart enameled steel stock pot, 8-qt enameled cast iron le creuset, and 8-qt all-clad stainless steel pot.

You should be fine. I think the poly tanks are convenient because they're common to the professional kitchen and easily stored, stacked, etc. The only thing I can see being a pain is the size difference. Since the poly tanks are wide and deep I can heat a smaller amount of water more quickly and still leave a lot of room for displacement with big pieces of protein whereas I think in a pot it will be more difficult to do big pieces.

@Josh The biggest downside to a metal pot is its conductivity. They are constantly convecting heat away through the sides. So long as the pot isn't huge and it's not stuffed with food, you're usually fine. But if it gets crowded, or your pot is enormous, then you will start to get hot and cold spots. Up to a 16 quart pot will, in practice, be fine.

I still use what I can find in my house to use the sirculator in. Like this picture shows I have also used cooling bag for big pices.

They work good for me :-)
