hey guys, im trying to make soft serve without any dairy product, just from fruit juice. wich are the best emulsifiers and stabilzers i could use to make this happen.?
i was thinking on using CMC instead of xanthan gum, and a kind of cold soluble gelatin. Also if theres any trouble of making this product without any fat, would it mess up the machine?
