Two types of pickles (sweet brine and savory brine), sliced beets and one of our favorites, mustard pickled veggies. I love that the veggies are not over cooked like when you do a standard water bath. Sous Vide canning is really great!

I am trying the pickle recipe now. Question; at what point can one expect the seal to be airtight? I'm watching and waiting for it to happen but it hasn't just yet...I don't want another hour to pass only to find out none of my jars have sealed.

Hi Lou, the seal happens after you remove them and leave them on the counter to cool. The cooling of the air (head space) is what causes the vacuum. Any that might not seal, just keep in the fridge and use those first.

The jars sealed. I'm noticing the pickles have what look to be tiny air bubbles surrounding them, though. Is this normal or a sign something is not right?

As long as your brine was right and they sealed you should be fine. Those should dissipate as the brine gets into the pickles.
