Pickling-sous vide for canning

I'm wondering if the sous vide technique for pickling will also work for other types of canning (excluding anything that needs to be pressure canned). For example, would it work for canning tomato sauce?

I am not an expert, but if you follow the basic rules that Douglas Baldwin, PhD sets out with the pickling recipes I think you would be good to go. I just did our family recipe for mustard pickled veggies and it worked great.
