Walk into my local Tom Thumb (now owned by AB Acquisition the same mob that own Alberstons) and see a few Sale signs up in the meat department but no prices yet. Start talking with a butcher mate and 15 minutes later I'm walking out with 7 whole tenderloins, weighing a hair over 45lb in total - at $9.99/lb.
After some time playing butcher I have 5 center cuts (2 for clients tonight) 7 tail medallions, and 7 head roasts. Yield was ~65%.
The sale is on until Tuesday.
