My father is on a low iodine diet prepping for Thyroid Cancer treatment. Low Iodine means almost no salt so just about everything packaged is ruled out along with dairy and eggs and chocolate and splenda pie ( a favorite). You can also remove anything related to the sea from fish to carrageenan- lots of label reading. We've got the MSK (if you don't know the acronym, lucky you) Cookbook but are looking for ideas, diabetic friendly ideas at that.
He's not a fan of spicy but is okay with seasonings. He's also diabetic. In the coming days, he'll grow cranky in the coming days as red wine is a no-no. I'm working to find some flavorful ideas for this month and keep the crankiness at bay.
Tonight, simple roasted chicken from the organic grocer in Traverse City. A sautéed corn, garlic, green onion, tomato and balsamic side (outstanding). Rice pudding with raisins and coconut milk (pretty good).
Tomorrow, fresh beef, lots of roasted tomato and a few bell peppers, sautéed onions and some seasonings and pasta.
Wednesday, fresh beef and veggie kabobs....
Thursday, a bit of a panic ...perhaps an organic chicken seasoned heavily with lettuce for a taco like dinner. Can I get no additive pork here?
