Steaming without steam oven

Hey guys, need help with something haha. In order to make fermented shrimp sheets I need to steam the paste for 4 min on 55 degree in a combi oven. The only thing is is that I don't have a steam oven available but what I have is an overpriced Viking set. 

A lot of smart people here so what would you do? Just put it in the oven, covered, on 55 degree with a tray filled with towels and hot water?

I don't know if it would work, but this is what I would do. I would take a hotel pan, or similar, and put a few inches of water in it. I would cover it with another inverted hotel pan, or similar, and put it in your oven, and heat it until the water was 55°C/131°F. I would then suspend the shrimp over the water, in the two hotel pans, to mimic that humid environment. I have no idea if this would work, but if I had to try this without the benefit of a combi oven, this is what I would go about doing. Let us know what you end up doing, and how you make out with it.
