Hey guys, need help with something haha. In order to make fermented shrimp sheets I need to steam the paste for 4 min on 55 degree in a combi oven. The only thing is is that I don't have a steam oven available but what I have is an overpriced Viking set.
A lot of smart people here so what would you do? Just put it in the oven, covered, on 55 degree with a tray filled with towels and hot water?
