Dry Ice Sorbet

Made some black apricot sorbet, fresh black apricots pureed with sugar and lemon juice. I churned it using the dry ice method in my stand mixer. It is so creamy and smooth and made a nice quenelle over an almond crumble. Thank you ChefSteps!

I live in an apricot wasteland, and so please forgive my ignorance. Is the black apricot the same thing as a black velvet apricot (an apricot/plum hybrid)? It sounds fantastic.

. Yes, I think that black apricots are an apricot/plum hybrid and are also called black velvet apricots. Thank you for the question.
