I can't imagine why not. They have a couple different recipes for cheese curds, you would just need to augment the recipe to making mascarpone.

Absolutely. Here is how I do it:
2 cups heavy cream (not ultra-pasteurized)
1 tablespoon lemon juice
Heat circulator to 88C. Combine cream and lemon juice in a bag and submerge in the water. Check after a half hour or so and keep checking until the mixture has thickened, perhaps an hour. Cool to room temperature and then strain in cheesecloth for 8-12 hours.

Yes, Joule is great for making all kinds of dairy. Cheddar, yogurt, sour, mozzarella etc....
