Pistachio mousse

Hi all.

I recently bought a jar of pistachio paste, and I was thinking about making a pistachio mousse to go with a dark, and not so sweet, chocolate delice or something like that. Does anyone have a nice recipe for a (sweet) pistachio mousse? I was thinking about incorporating air with (and serving it from) a iSi siphon.

Here's a base recipe I use. You can exchange the pistachio paste for almost anything (e.g. chocolate). However, since pistachio has a mild flavor, I would recommend adding/subbing roasted pistachio oil (e.g. 180g cream 80g milk, 40 g pistachio oil-rest is the same).

200g cream

150g pistachio paste

100g milk

24g powdered sugar

Combine, add to whipping siphon. Charge with 2 charges

No eggs or anything else to make it more firm/set? And also, do you serve it immediately, or do you let it rest in the fridge before serving it?

Yes but careful, In the fridge might stiffen the paste too much so that it doesn't pass through the siphon. No need for eggs (that would make it a custard) Make sure you blend real good and pass through a sieve/tami.

I would add a few drops of pistachio flavoring because of the mild flavor of the pistachio paste. And maybe a drop or two of green food coloring just to get a pistachio green color... That's what I would add to @Todd_Shewman_38102 base recipe. With that said I will tell you that I have gone to all the work and found that other people actually preferred one I whipped up in a hurry that used instant pistachio pudding in the base. They said it tasted more like pistachios.

The roasted pistachio oil should add enough flavor that's why I mentioned/included it.
