So I have a bake off at school about to happen, and I'd like some recipes I could use to enter. Anyone have any ideas?

If the lemon cakes don't work out, the CS chocolate chip cookies are pretty great. If that's not fancy enough, try the gluten-free version for extra cred:

Dang, I guess I can't make the lemon cakes. Apparently HM pectin is around AUD$30 for 50 grams. The cookies seem nice, though.

Where in the world were you looking? I'm not saying it's cheap, but there are significantly cheaper options.

Bananas foster caramel brownies.
Make a rich, fudgy, dark chocolate brownie batter. Preferably with brown butter.
To make the caramel, take a saucepan and add a bunch of sugar. Medium heat. Do not touch it until it turns to caramel, then add some pureed banana. The bananas should be as overripe as possible. Cook for a little while, add bourbon and flambee (you can also use rum or something but I like bourbon). Cook longer. Add some salt. And butter and cream/milk. I don't have a recipe for this. Making caramel is super easy so you can really mess around with the ratios.
Put half the batter in the pan and spread it out evenly. Then take your caramel and pour it in, spreading it around so it's an even layer. Then pour the rest of the brownie batter on top, spread it around, and bake the sucker until it's done.
