A Gel to dissolve

Hey guys,

I am trying to create a Cocktail where some liquid is gelled at the bottom of the glass. When pouring in the other liquid the gel should dissolve.

I am thinking pectin as the gelling Agent and Pectinase in the other liquid.

Any other ideas?

Does it need to be cold? Many gel dissolve in warm liquid. Other option could be something frozen that will melt liberating flavors and keeping your cocktail cold.
