I am trying to make the Starburst like candy recipe from Chefsteps but want to replace the shortening with organic coconut oil. My first attempt left me with a stringy soft candy failure. Brought the sugar to the correct temp, the only difference was the coconut oil, which is much softer than crisco.
So, a thought i had was to add Glycerin flakes ( aka Glice) to the coconut oil to firm it up to the consistency of Crisco. Has anyone added glycerin flakes to coconut oil? Does anyone think this will work or am i chasing my tails and need to just use the crisco? Any and all help will be greatly appreciated.
