I haven't, but chef Daniel Patterson of Coi co-authored a book with perfumer Mandy Aftel on essential oils called "Aroma: The Magic of Essential Oils in Food and Fragrance." As far as I know, it's the best resource on the topic currently available.

There's also a bit of essential oil use in the Alinea cookbook. I followed one recipe out of there that used lime essential oil. A little bit went a long way.

There's a few ChefSteps recipes that use essential oils (from the Candy class, some sodas and a cocktail or two). Tony Conigliaro's book The Cocktail Lab has a lot of essential oil use-- interesting stuff. I've experimented a bit with juices (strawberry agua fresca w/ neroli essence was a success) and ice cream, but haven't really gotten too far into it yet. I think there are lots of possibilities...
