Sous vide LARD RENDERING
Before Start, I have to mention that this recipe got inspired from
MAN VS.MEAR blog.
In Our country getting Lard is so hard.
And most of people think lard is not nessesary.
However because of this reason you can get fat of pig for free from butcher in Korea.
So we decided to make recipe for lard rendering via sous vide.
Why? Because usually lard rendering is difficult and messy.
But if we are using this recipe it would be easier.
Let's start.
*before start I have to mention that my english skill is not that great.
INGREDIENTS
PORK FAT 1kg
BAKING SODA 4g
*BICARBONATE SODAY WILL DO
*0.4% of fat weight
EQUIPMENT
Sous Vide Machine
Blender
Fine sieve
Ziplock bag
TIMING
3~4hr
YIELD
About 800g
RECIPE
STEP 1 Set temperature for Sous Vide to 88 degrees Celsius
STEP 2 Packing ingredients
Put fat with soda into Ziplock bag.
STEP 3 Sous Vide
Calm Ziplock bag in to bath and open little bit of entrance of it.
Cook it for about 30min
CAUTION
If you Seal the entrance of Ziplock,pack could be burst out bacause of CO2
STEP 4 Grind
Take out ingredints and grind it at Blender.
STEP 5 Re Sou Vide.

Do same process as step 3.
Sous Vide it for 2~3hrs.
STEP 6 Sift

Take out ingredients and sift it on sieve.
Do not press it hard.
STEP 7 Finish

Chill lard at room temperature then pour it in to container.
Make sure pour only clear part of lard.
Now store it into fridge or freezer.
Enjoy it.
Now you can use 100% lard for cooking or making soap :-)
NOTE
This lard will be last for long than normall rendering products.
Oxidation will be occure slowly.
