Had some local beets (huge) and have been toying with starter/salad ideas. The challenge for me is salads can be tasty (it's my go to at lunch) but to have the punch in a bite.....enough that one is enough and then to have it disappear relatively quick. This turned out fairly well and I ended up serving it with a single bite cucumber gel with walnut custard and black pecan dusted with Nitro poached greens and caraway seeds. (Will post when I get to my pc). Beets were roasted with garlic and oil, then juiced and combined with reduced balsamic (w/port). Made a fluid gel then made spheres and froze them. Infused cocoa butter with horseradish (50%), and white balsamic. Dipped the spheres in the infused cocoa butter. Intense indeed. All comments positive and intense was the most common adjective. :-)
