I am thinking of taking the soft serve recipe and turning it into dole whip. Who has done this already, and what was the best approach to get the best flavor?

Is your intention a version of a whipped cream? ...never done it with an ice cream base, but what if you just put it in an ISI-type whipper and charged it with NO2?

Dole whip, like at Disney? Frozen fruit, coconut milk and a good commercial quality blender.
