hi, if I were to replace brisket with short ribs, how will it affect the duration of the brine, and the cook (temperature and duration). Thanks!

The temperature you cooking it at depends on your personal taste and preference ( level of doneness and texture you desire). brining time and cooking duration I wouldn't change at all. They make a pastrami using short ribs, and they brine these for a similar time. They cook them for a shorter period of time, however, they also smoke them for a considerable amount of time. I would cook them for the same time.
