I believe you're looking at the whole recipe. The first part is the yeast development ingredients (wet) and the second section are the dry ingredients that are added to the wet once the yeast has 'proofed'. You'll find almost all bread recipes are created in the same way.

While I would never discourage anyone to start baking their own breads all the time, this one might be more of a challenge for a novice baker. But soldier on and Good LUCK!!

The difference in the weight is the 25 grams of egg used for the egg wash used later in the recipe. The top part is for hydrating the yeast, the
wet ingredients
(note there is no flour, salt, butter or oil) and the bottom one is a
list of all the ingredients
, and the egg states divided. They are the same, there is no difference.

6 mins prep (driving to store)

followed by:
.2 gallons of gas (divided from above)
6 mins finishing time (driving from store) + 30 secs for opening bag (1.5 mins if drunk)
Yield is 8 perfect buns
total time less 20 minutes

Now THAT'S too much work. All that driving and going into a store and driving back....not to mention having to get dressed first. oi.

I'd like to hear back on how things go for you, Vincenzo! Trust me when I tell you that when I first started baking breads, I created a whole lot of doorstops along the way. Just keep at it and you'll get there!!
