Swapping the flour in cookies...

If I were to use bread flour in Chefstep's choc chip cookie recipe, would it drastically affect the outcome? I just bought a load of bread flour for banana bread and don't want to splurge for flour again.

You can do it and they will still be good. As bread flour has more gluten you want to just mix enough to combine the flour, don't overwork it, or gluten will developed. This will be a denser cookie, but still very good. All purpose flour would be a better substitute as it generally has less gluten than bread flour but more that pastry flour.
