Fuchsia Dunlop has released a number of well-regarded books on the subject, as well as a memoir. A good place to start would be Every Grain of Rice. Simple, delicious recipes, lots of vegetable dishes too.

My darling bride, Emily, gave me a book by the reported Julia Child of Chinese cooking, Pei Mei. It is badly translated, but useful. I saw a documentary (I think) program about a long term
restaurateur Cecile Chiang, who apparently influenced both Thomas Keller and Alice Waters.I welcome all contributions to this thread!

Hmmm do you know why he heats the yeast like that? I think it kills it because he adds more but why even add it in the first place?

I don't think he is heating the yeast. I think that is the sour dough starter, skyr, sugar and some water. Then made into a caramel, add butter then when cool enough a yeast cake is grated and mixed in. I would think that they then allowed the yeast to work to develop air pockets before the vacuum expansion and blast freeze. Just my best guess.
This reminds me of making "Aero" style chocolate, the procedure is very similar (CO2 enfused chocolate in a siphon then same procedure, vacuum and maintain the vacuum while the chocolate cools).
BTW, don't try to vacuum seal yeast dough before it's frozen unless you have a lot of extra time to clean your chamber vacuum.
