hey guys been a big fan for years, got all my cooks on to you guys but i did have a question. right now im working on some new dishes for a new job and menu im starting but i was wondering if you could help me out with something. I wanted to make compressed Nopal or a Nopal crust to go on and entree, the compressed nopal would go around a filet replacing what would be bacon and the crust would be more like for the crust of lamb chops. i'm not near a cryovac but the new kitchen does have it and i wanted to utilize it. i'm not asking if you could try it out for me but if you could point me in the right direction that would be great
