Help with goat!!!

In a quest to eat a little lower on the food chain, and out of appreciation for some fantastic goat I've eaten while "traveling" in the military, I'm on a quest to be come a good home goat cook. HELP!!!!! Need some techniques, recipes, and a mentor.

I love goat, but have only cooked some halal goat pieces in a stew. It has little fat, so it must be handled carefully. My local butcher has goat ribs with the front leg still attached, and I have flirted with cooking it for a while now. Do a search for goat on the forum and you will find a brief discussion. I would love to hear more people's thoughts about this delicious and healthy to eat beast.

Oh I'm huge into goat lately so here are some of my favorite applications:
1. Ground goat nachos! Take your ground goat and cook it with some spices to your taste (like cumin etc) and put on top of nachos with cotija cheese, mexican shredded cheese mix, green onions, bell pepper, tomatoes, other veggies like sliced/diced radishes, bake to melt cheese. Pretty goat good! -- my buddy also makes the indian dish Goat Kheema and we'll sprinkle it onto the nachos which is nice for....Indian Goat Nachos!

5. Sous vide Goat belly confit - I did this two weeks ago in duck fat for about 12 hours and then used my torch on the belly to crisp up it up a bit. Could probably go nicely in tacos but I had it over rice.
6. Today I'm frying goat brains in Wondra for me and some co-workers at the office....but that may be advanced goat adventuring.
7. I almost forgot the awesome goat shoulder tagine makfoul I made in the slow cooker two weeks ago too!!!

p.s. While I use the slow cooker on low for 8-10 hours usually clearly you can just throw it in a vacuum bag and sous vide it for 8+ hours too to be modernist. I've just been having an affair with my slow cooker lately.
