Fluid Gel

Hi I write from Italy about orange fluid gel. Gellan gum and xanthan gum aren't avaible in stores so can u suggest me a solution? We can find gelatin, agar agar, corn starch or rice starch. Can u tell me how many grams to use for one liter of juice? The method is the same? Thanks !

Try 10g agar per liter.

or you can try gluten free shops. xantham gum is used a lot in gluten free baking so you should be able to find it there (I got some near Rome in this way)

Agar is available especially in Asian stores but in other markets, as well. Use,about 1% agar to flavor base. Gellan is available on line via Sosa and others.
