Thanks brian. Yes i read that one and a couple of others, i tasted the dehydrated foam at Daniel Humm NoMad in NYC and i was very intrigued by it. this week I was watching the great british menu on the BBC and one of the chef failed to make it, the foam collapse. I was curious as to why they wouldn't add some lecithin to stabilize it. i'm going to play with it and experiment.

My guess it's because it would only stabilize it as a foam. When you would start to dry it out, it would collapse, defeating the entire purpose. Anyway, that's just my take on it. Could be completely wrong.

have you checked out his nomad cookbook? There is a recipe for it in there. It's absolutely delicious.
