It's Passion Fruit Season

Ordered a few pounds, first recipe a favorite- a batch of heston's exploding chocolate gateaus. These smaller size bites I use a glaze to finish instead of paint sprayed chocolate (my preference). The spray paint approach really does make a difference. Instead of flavorless nut oil, I prefer to use a cocoa butter or roasted nut oil which adds another element of flavor.

Hi Joe, See @brian s comment and let me know if you can't find it. As mentioned in my post, it's really heston's recipe. The only thing I really do to modify the main recipe and low blend the passion fruit and seeds b/f infusing the cream. For the recipe I showed, i made a chocolate glaze as these are mostly bit size portions. If you make a whole cake, try the spray painting. the effect is really cool (and there I usually use a roasted nut oil for different flavor)
